Erucic acid is built from oleic acid by two rounds of chain elongation, adding two carbons at a time through the C20 intermediate. Rapeseed varieties bred to be low in erucic acid carry a defective elongase, which is exactly why their oleic acid content is high. The two are inversely related in any given oil.
Erucic acid is a 22-carbon monounsaturate, long enough that it is handled poorly by the mitochondrial carnitine shuttle and depends partly on peroxisomal chain shortening first. Carnitine availability governs entry of the shortened product into mitochondria. This describes why the fatty acid oxidises slowly, and it is not a reason to assume carnitine changes anything about erucic acid intake in people.
Erucic acid and the long chain omega-3s were compared as dietary fats in a mouse study looking at liver fat accumulation on a western-style diet, and they did not behave alike. Both are long chain fatty acids competing for the same handling machinery, but the directions differed. This was measured in mice, so it describes the animal model and not people.
The same mouse feeding study set docosahexaenoic acid against erucic acid. Both are 22-carbon fatty acids, so they compete at the level of elongation, desaturation and incorporation into complex lipids, but their metabolic consequences in that model diverged. The finding is a marker-level observation in mice, not a human outcome.
Very long chain fatty acids share the elongase and desaturase machinery and the same acyltransferases that place them into triglycerides and phospholipids. A large erucic acid load competes for that capacity. This is a mechanistic expectation from shared pathways rather than something demonstrated to matter at dietary intakes in people.
Erucic acid is a marker used to detect adulteration or varietal drift in seed oil supply, because true flaxseed oil carries essentially none while high-erucic rapeseed carries a great deal. Its presence in a flax product points to blending with a Brassica oil. That makes it an analytical marker of identity rather than an added ingredient.
Erucic acid carries one double bond and is therefore oxidisable, though far less so than polyunsaturates. Seed oils containing it are stabilised with tocopherols, some of which are native to the oil and some added. This protects the oil in the bottle and says nothing about effects in the body.
In rapeseed oil the proportion of erucic acid and the proportion of the shorter unsaturates including linoleic acid move against each other, because the elongase diverts oleic acid away from the pool that would otherwise be desaturated. Breeding out erucic acid raises both oleic and linoleic content. This is compositional arithmetic, not a physiological interaction.
