No study gave these as a pair, so they are not in the card above. But the reason they belong together is settled biochemistry, not a guess, so it is worth knowing.
Phytase hydrolyses phosphate groups from the inositol ring, and the lower inositol phosphates that result no longer bind minerals tightly. Wheat carries its own phytase, which is activated by sourdough fermentation and by soaking. This is exactly why long-fermented breads deliver more absorbable zinc and iron than fast-leavened ones from the same flour.
Zinc absorption from a wholegrain meal falls as the phytate load rises. Khorasan wheat carries phytate like other whole wheats. Anyone taking a zinc supplement gets more from it away from a large wholegrain meal. Fermentation of the grain reduces the effect at source.
Non-haem iron uptake from a wholegrain meal is markedly lower than from the same iron given without phytate. Ascorbate in the same meal partly counters it by reducing and solubilising the iron. Separating an iron supplement from the grain meal is the simpler route.
Cereal selenium is almost entirely a function of soil selenium and comes through mainly as selenomethionine. Grain grown on selenium-poor soil carries little regardless of variety. Any selenium claim attached to the grain as a variety, rather than to a tested lot, is not supportable.
How much resistant starch a wheat food delivers depends on processing and cooling, not on the wheat variety alone. Whole intact kernels resist digestion more than finely milled flour. Combining with an isolated resistant starch adds to the fermentable load rather than changing its nature.
Arabinoxylan from wheat bran is fermented by xylan-degrading gut bacteria and cross-feeding then yields butyrate. Supplying butyrate directly skips the fermentation entirely and delivers it proximally unless coated. The two are different delivery routes to the same molecule.
The immunogenic gluten peptides are proline rich and resist normal gastric and pancreatic proteases, which is the whole reason they survive to reach the intestinal mucosa intact. Standard enzyme complexes do not solve this. Khorasan wheat contains gluten and is not suitable for anyone who must avoid it, regardless of what enzymes are taken with it.
