Rosin, also known as colophony, is the leftover material after turpentine is distilled out of pine resin. It's a mix of resin acids, mostly abietic acid and its close relatives.
Abietic acid reacts with air over time to form peroxides and other oxidized byproducts. It's these oxidized byproducts, not the fresh resin, that are the recognized cause of skin reactions, which is why older rosin tends to be more irritating than fresh.
Colophony is one of the standard substances tested for on skin-allergy patch tests, reflecting how often it turns up in adhesives, cosmetics, waxes and medical tape.
Rosin acids don't dissolve in water but do dissolve in alcohol, ether and oils. So any water-based product actually uses a chemically altered version of rosin, rather than the raw material.
