Stereospermum bark is polyphenol-rich, and condensed tannins bind non-heme iron in the gut into a complex that is poorly absorbed. A decoction taken with an iron supplement lowers the fraction of iron taken up from that dose. Spacing them apart by a couple of hours sidesteps most of it. This is general polyphenol chemistry applied to a tannin-bearing bark.
Ascorbic acid keeps iron in the soluble ferrous form and competes with polyphenol chelation in the lumen. Adding it to a meal containing a tannin-heavy decoction recovers part of the lost iron uptake. The effect is well established for tea polyphenols and carries over to other tannin sources. It blunts the interaction rather than removing it.
