Bael, especially the unripe fruit, carries a meaningful tannin load. Tannins bind non-heme iron in the intestine and reduce how much crosses the mucosa. Separating an iron dose from bael by two hours removes the overlap. This is a timing question, not a reason to avoid either one.

Bael + Vitamin CAscorbate reduces ferric iron and competes with polyphenols for it, a long-established counter to tannin-driven iron binding.
