Combining them raises total inhibitory polyphenol in the gut lumen. Enzyme inhibition in a test tube is a marker, not an outcome, and the dose that reaches the small intestine after a beverage is far lower than assay concentrations. Read it as mechanistic rather than clinical.
Anthocyanin extracts are hygroscopic and clump badly on their own, so they are usually spray-dried onto a carbohydrate carrier such as inulin or maltodextrin.
