Hornbeam bark and leaf carry tannins, and tannins bind ferric iron in the gut lumen into complexes that are not absorbed. Anyone taking an iron supplement should keep a tannin-rich botanical a couple of hours away from it. The same applies to strong tea for the same reason.
Where tannins pull iron out of solution, ascorbate pushes back by reducing it to the ferrous form and holding it in a soluble chelate. The offset is partial and depends on the ratio of ascorbate to polyphenol. It is the standard way of managing the interaction rather than a synergy in the promotional sense.
Protein in the same serving mops up free tannins by binding them, which cuts the dry mouthfeel and also cuts how much free polyphenol remains available. For a formulator this is a palatability tool. For a user it means a botanical taken with a protein shake behaves differently from the same botanical taken with water.
The same phenolic hydroxyl groups that bind iron will complex zinc, though with lower affinity. Separating intake by a couple of hours removes the concern. This is general polyphenol chemistry applied to hornbeam rather than something measured for this species.
Carpinus betulus sits in the birch family, whose leaves are consistently flavonol-rich. Pairing the leaf with isolated quercetin stacks the same compound class. The species-specific constituent profile of hornbeam is much less characterised than that of birch, so this is inference from family chemistry.
