No study gave these as a pair, so they are not in the card above. But the reason they belong together is settled biochemistry, not a guess, so it is worth knowing.
Coix seed contains soluble fibre including beta-glucan, the same viscous polysaccharide class that gives oats their texture in liquid. Used together the viscous fibre load adds. The mechanism is the same in both cases, which means it is a dose question rather than a new effect.
Starch that retrogrades on cooling escapes amylase and ferments in the colon. In a whole grain like coix that fraction depends on preparation, not on the grain identity alone. Combining it with an isolated resistant starch raises the total fermentable substrate reaching the colon.
The one human trial available added coix to yogurt rather than giving it alone, so the pairing is how the grain has actually been tested. Cereal fibre supplies fermentable substrate for lactic acid bacteria. The design means any result belongs to the combination, and the grain's independent contribution was not isolated.
The dominant storage protein in coix is a coixin, part of the prolamin family that also includes maize zein. These proteins are hydrophobic and digest slowly in their native state. Milling, heat and added proteases all raise the accessible fraction. Read this as a processing consideration rather than a clinical effect.
Phytic acid binds iron with high affinity at intestinal pH and the resulting complex is not absorbed. Any whole grain eaten with an iron supplement lowers that dose's uptake. Vitamin C in the same meal partly counters the effect. Spacing the two apart is the simpler answer.
Phytate to zinc molar ratio is the standard predictor of zinc bioavailability from cereal based diets. Coix, like other whole grains, contributes to that ratio. Soaking, fermenting or sprouting the grain activates phytase and reduces the effect. Taking a zinc supplement away from the grain meal avoids the question entirely.
Phytate loses its mineral binding capacity as phosphate groups are stripped from the inositol ring. Added or endogenous phytase does exactly that, which is why traditional soaking and fermentation of grains raise the absorbable fraction of minerals from that meal. Whether that translates into better mineral status over time is a separate question. The enzyme has to act on the grain, so timing and moisture matter more than dose.
Calcium phytate is poorly soluble and forms readily in the small intestine. The practical impact is smaller than for zinc because typical calcium intakes are much higher relative to the binding capacity present. It still argues for separating a calcium supplement from a large whole grain meal.
