Carminic acid is a pH indicator dye: orange in acid, red near neutral, purple as pH rises. Ascorbic acid lowers the pH of a beverage or chewable and shifts the colour toward orange. Formulators either accept the shift or buffer it, and the interaction is entirely about appearance rather than about anything happening in the body.
Carmine lake, the insoluble pigment form, is made by precipitating carminic acid with aluminium and calcium ions. The metal complex is what makes the colour opaque and stable in a tablet coating. Without the metal the dye stays water soluble and bleeds.
The hydroxyanthraquinone core of carminic acid binds transition metals, and ferric iron in particular darkens or dulls the shade. In a multivitamin containing an iron salt the colour drifts over shelf life. This is a stability and appearance problem, and there is no evidence it changes how much iron a person absorbs.
Riboflavin contributes a strong yellow to any tablet or powder that contains it at nutritional doses. Carmine is often adjusted or paired against that background to land on the intended final shade. The pairing is formulation convention, nothing more.
Both are used as non-synthetic colourants, carotene for orange and carmine for red to pink. They are blended to reach intermediate shades in gummies and chewables. Carotene is oil dispersible and carmine is water dispersible, so the two sit in different phases of the same product.
Carminic acid fades with light and oxygen exposure, particularly in clear packaging. A lipid-phase antioxidant slows oxidative fading in fat-containing formats such as chewables. It protects the colour on the shelf and has no bearing on the person taking the product.

The red color comes from a specific pigment compound made by a female scale insect and extracted from its dried body.
Because the sugar part is attached in an unusual way, this pigment resists the enzymes that normally break down similar compounds, which is part of why the color holds up well over time.
This pigment's color shifts with pH, appearing orange in acidic conditions and shifting toward red and violet as things become more alkaline.

Where Cochineal comes from.
It is a red colour made from a small insect that lives on cactus. The insects are dried and the red pigment is pulled out with water. It is used to colour capsules, tablets and gummies, and it does nothing nutritionally: it is there so the product looks the way the maker intended.
