Where Euryale seed comes from.

It is the seed of a spiky water lily, grown in ponds and pulled out by hand. Dried, then roasted until it pops like popcorn, then the black shell is knocked off. What is left is the white kernel, which is mostly starch. Powders and extracts start from that same kernel but end up quite different from each other.
