Greater galangal is a rhizome from a species distinct from lesser galangal and from ginger, even though they're related and look similar.
Its signature compound is a specific phenylpropanoid ester, plus a volatile oil that's typically dominated by two other aromatic compounds.
Lesser galangal is a different, flavonoid-rich species that supplies galangin, and it's often sold under the same common name, so galangin content isn't a reliable way to identify greater galangal.
