Water kefir is produced by a symbiotic consortium of lactic acid bacteria, acetic acid bacteria and yeasts held in a polysaccharide grain matrix; the bacteria ferment sucrose to lactic and acetic acid while the yeasts produce carbon dioxide and small amounts of ethanol.
The grains themselves are largely dextran, a glucose polymer built extracellularly from sucrose by bacterial glucansucrase enzymes, which is why the culture requires sugar water rather than milk.
Fermentation lowers the pH of the beverage through organic acid accumulation, and that acidity is what limits growth of acid-intolerant organisms in the finished liquid.
Drying or concentrating a fermented liquid into a powder can reduce or eliminate viable organisms, so an extract may act as a postbiotic preparation of metabolites and cell fragments rather than as a live culture; viability depends on the process and the carrier, not on the source material.
