It is the woody underground stem of a thorny climbing vine that grows across southern China. Diggers pull the rhizome, slice it and dry it, and the sliced pieces are either boiled into a tea the old way or run through a solvent to make a powdered extract. It tastes dry and puckering because it is full of tannins.
