Fresh Ziziphus jujuba fruit carries a notable ascorbic acid content, higher per gram than citrus in many analyses. Drying, which is how nearly all supplement material is prepared, degrades much of it through heat and oxidation. A dried fruit extract is therefore a much weaker ascorbate source than the fresh fruit, and the two should not be described interchangeably.
The ascorbate to iron effect is settled chemistry and applies to any ascorbate-bearing food eaten in the same meal. Whether jujube contributes meaningfully depends entirely on whether the material is fresh or dried. Dried fruit or a dried extract carries far less, so the effect should not be assumed from the fruit name alone.
Pectin from fruit sources ferments in the colon to short-chain fatty acids and contributes some viscosity in the upper gut. Adding isolated pectin to a jujube preparation stacks that same substrate. The combination raises total fermentable load rather than doing anything new.
Pectin-derived oligosaccharides are fermented by several gut genera including bifidobacteria, though less selectively than inulin-type fructans.
