Mogroside V is sweet at concentrations hundreds of times below sucrose, so a consumer product needs a bulking agent to make a spoon-for-spoon replacement possible. Erythritol supplies that volume and mouthfeel while contributing almost no metabolisable energy. Most retail monk fruit sweetener is overwhelmingly erythritol by weight, which is worth knowing when reading an ingredient list.
Steviol glycosides carry a lingering bitter and licorice-like note. Mogrosides carry a slower onset and a cooked, slightly fruity character. Blending the two lets a formulator use less of each and land closer to a sugar-like curve. The pairing is sensory engineering, and both are non-nutritive.
Inulin adds viscosity and browning behaviour that a pure high-intensity sweetener cannot supply. It also ferments in the colon, which produces gas and can cause bloating at higher intakes in people who are not used to it. That is the trade-off for the texture it gives back.
FOS supplies body and a low level of its own sweetness in reduced-sugar formulations. It is fermented in the proximal colon, faster than long-chain inulin, so tolerance thresholds are lower for some people. The monk fruit contributes sweetness intensity, the FOS contributes everything else.
Ascorbate lowers pH and protects colour and flavour in ready-to-drink formats. Mogrosides are reasonably stable across the pH range beverages usually sit in, which is one reason monk fruit works in acidic drinks where some sweeteners degrade. The pairing is compatibility rather than pharmacology.
Caffeine is bitter, and sweetness suppresses bitterness perception at the level of taste integration. Monk fruit supplies that suppression without adding carbohydrate. Note that mogroside sweetness has a slower onset than sucrose, so bitter notes can surface first and then be covered.
Sugar-free lozenges need a sweetener that does not feed oral bacteria, and mogrosides are not fermented by cariogenic species in the mouth. Menthol supplies the cooling and the aroma. The combination is standard practice in sugar-free throat and mint products.
Psyllium forms a viscous gel that most people find hard to drink. A high-intensity sweetener makes it tolerable at a dose small enough not to affect the viscosity. Mogroside V does not contribute to the carbohydrate count, which is often the point of the product.
Whey isolate is bland to slightly bitter and needs sweetening to be drinkable. Monk fruit does that at fractions of a percent by weight, keeping the macronutrient panel clean. Its slower sweetness onset is usually covered by blending with another sweetener in these formats.
