Why these belong in the same formula. Each row says what the basis is, from settled biochemistry through to a trial that measured the pair.
Tannin-rich infusions are among the strongest known inhibitors of non-heme iron absorption, which is why tea taken with meals reduces iron uptake. The leaf of Ceanothus americanus is astringent and tannin-bearing, so the same chemistry applies. Separating the infusion from an iron-containing meal or supplement by one to two hours is the usual way round it.
Ascorbate reduces iron to the ferrous form and competes with polyphenols for it, which restores some of the absorption that tannins would otherwise block. The rescue is partial, not complete, and it depends on the ascorbate to polyphenol ratio. It works only when both are present in the same meal.
The same phenolic hydroxyl groups that bind iron also complex zinc and copper, though less avidly. In diets already low in zinc this adds to an existing burden alongside phytate. Spacing intake from mineral supplements is the practical response.
Adding protein to a tannin-rich infusion reduces the mouth-drying sensation because the tannin binds the protein instead of salivary proline-rich proteins. Formulators use this deliberately to soften astringency. The trade-off is that the tannin is then bound, so anything attributed to free tannin is reduced.
Tannin affinity for proline-rich proteins is why saliva evolved them and why gelatin is the classic laboratory reagent for tannin removal. A collagen peptide co-formulation will bind a substantial share of the tannin fraction. Useful for palatability, counterproductive if the tannin is the intended active.
Non-specific protein binding does not spare digestive enzymes, so a strongly astringent infusion taken with an enzyme supplement will reduce the enzyme activity delivered. Separating the two by an hour or more avoids the overlap. This is a formulation point rather than a health risk.
Combining two tannin sources raises total astringency and total mineral-binding capacity rather than adding a second mechanism. Traditional astringent blends often stack them for exactly this reason. The combined tannin load is what drives both the intended effect and the gastric irritation some people report.
Condensed tannins are too large to absorb intact, so whatever reaches the circulation is a microbial metabolite. Which metabolites appear depends on the individual microbiome, and conversion capacity varies widely. This explains part of why polyphenol responses differ between people, without predicting the direction for any given person.
Ceanothus americanus leaf gained its common name as a caffeine-free colonial substitute for Camellia sinensis during the American boycott of British tea. It shares the astringency of black tea without the methylxanthines. Anyone reaching for it expecting a stimulant effect is reaching for the wrong plant.
