Both contribute phenolic compounds to the finished preparation. The basis is culinary convention rather than a measured interaction. Nothing here claims a physiological effect from the pair.
Cinnamon rounds out the aromatic profile of smoked plum drinks and shares the phenylpropanoid chemistry class with several smoke-derived compounds the plum picks up. The two are combined for flavour, not for a physiological target. Cinnamon carries its own coumarin consideration depending on which species is used. This is a formulation pairing.
Plums carry tannins and other polyphenols, and smoking adds further phenolic compounds to the surface. Those bind non-heme iron in the gut and form complexes that are not taken up. A concentrated plum preparation taken with an iron dose lowers how much of that iron is absorbed. Spacing them apart handles it; this describes an absorption competition and not anyone's iron status.
Ascorbate keeps iron in the ferrous state and forms a soluble complex with it, which partly offsets the binding that plum polyphenols cause. Plums also contribute their own organic acids to the same effect. This is standard mineral absorption chemistry. It does not make the polyphenol interaction disappear, it reduces it.
Plums are a notable source of pectin, a soluble fibre that gut bacteria ferment to short-chain fatty acids. A whole-fruit smoked plum preparation carries that pectin along with its sugars and acids. Concentrated extracts and flavour preparations largely do not. Whether a given product delivers meaningful fibre depends entirely on how much whole fruit is in it.
Most fruit polyphenols pass the small intestine unabsorbed and are broken down by colonic bacteria into smaller phenolic acids, which are the compounds that actually reach circulation. Plum pectin is fermented by the same community. The gut community therefore determines what a plum preparation delivers. This is settled absorption biochemistry, not a tested product pairing.

Smoking deposits phenolic compounds onto plant material, chiefly guaiacol and syringol derivatives from the thermal breakdown of lignin, along with carbonyls from cellulose and hemicellulose. These are what give smoked fruit its characteristic aroma.
Thermal processing of any organic material also generates polycyclic aromatic hydrocarbons, and the amount depends on smoking temperature, whether the smoke contacts the food directly, and how long the exposure lasts. Controlled smoking conditions and indirect smoke generation lower the amount deposited.
