Ascorbate donates an electron to ferric iron, holding it in the ferrous state that the DMT1 transporter accepts. The effect is largest for non-heme iron eaten with plant meals containing phytate or polyphenols. Sodium ascorbate behaves the same way as the free acid here because the ascorbate anion is the active species. Taken together in one dose is what matters, not the same day.

Ferrous sulfate arrives already reduced, and ascorbate keeps it from oxidising in the gut lumen before uptake. The non-acidic sodium salt is often chosen when an acidic ascorbic acid load is poorly tolerated alongside iron. This is uptake chemistry, not a statement about iron status outcomes.

Sodium ascorbate is the sodium salt of L-ascorbic acid. In water it dissociates into the ascorbate anion, which is the biologically active species, and a sodium ion, so the vitamin activity is identical to the free acid while the solution sits near neutral pH instead of being distinctly acidic.

Ascorbate is a one-electron donor that keeps the iron or copper centres of a family of dioxygenases in their reduced, catalytically active state. Prolyl and lysyl hydroxylases, the two carnitine-synthesis hydroxylases and dopamine beta-hydroxylase all depend on it.

It starts as corn or wheat starch. That sugar is turned into vitamin C through a mix of fermentation and chemistry, and then neutralised with a sodium base so the finished powder is not acidic. The molecule is the same vitamin C either way; what changes between suppliers is grain size and purity spec.

Chemically synthesised. The molecule is identical to the one a plant or an animal makes, and building it deliberately means a known purity, a fixed dose and no crop contaminants. For several nutrients this is the only route that reaches a usable amount.
