Ferrous sulfate is the classic non-heme iron salt and the one most affected by polyphenol binding. Taken in the same sitting as a tannin-rich decoction, a measurable fraction of the dose is bound and lost. Separating the two by a couple of hours is the standard workaround.
Ascorbate reduces ferric to ferrous iron and forms a soluble chelate that resists polyphenol binding, which is why it is the standard counter to a tannin-heavy meal. Adding it alongside iron partially offsets the inhibition from a tannin-rich botanical. It offsets rather than eliminates the effect.
