Milk thistle seeds are ground, the oil is pressed out, and a solvent pulls out the active compounds, which are then dried into a powder standardised to a set percentage. Different solvents give slightly different mixes of the individual compounds. The percentage on the label depends on which lab method measured it, which is why two 80 percent extracts can differ.
