Where Monk Fruit Concentrate comes from.

It comes from a melon-like fruit grown on vines in southern China. The fruit is crushed and soaked in hot water, and the liquid is run through a resin that grabs the sweet compounds and lets the sugar and acid pass by. What is left is concentrated and dried, then tested to see how much of the sweet compound is in it. Because that compound is hundreds of times sweeter than sugar, most of what is in a retail packet is a bulking agent, not monk fruit.
