No study gave these as a pair, so they are not in the card above. But the reason they belong together is settled biochemistry, not a guess, so it is worth knowing.
Lecithin is an emulsifier: it lowers interfacial tension and stabilises the films that hold a foam together. A silicone anti-foam does the opposite, spreading across those films and rupturing them. Put both in one liquid and each partly cancels the other, so formulators balance the ratio rather than maximising either. This is interfacial physics, not a nutritional interaction.
Whey proteins unfold at an air-water interface and stabilise foam, which is why a shaken protein shake holds a head. Anti-foam agents are added to protein powders and to protein processing streams specifically to collapse that foam. The anti-foam changes texture and mixing behaviour, not the amino acid content. Nothing here bears on the nutrition of either ingredient.
Bacterial fermentation broths foam heavily as gas evolves through a protein-rich medium, and uncontrolled foam costs headspace and fouls filters. Anti-foam agents are dosed into fermenters to keep the vessel working, then largely removed downstream. The anti-foam is a processing aid in the manufacture of the culture, not a co-active in the capsule. Residual levels are trace by design.
Microbial enzymes such as amylase, protease and lipase are produced in submerged fermentation, which foams for the same reasons any protein-rich aerated broth does. Anti-foam controls that foam during production. It plays no part in enzyme activity once the powder is in a capsule. Regard the relationship as manufacturing rather than formulation synergy.
Food-grade oil-based defoamers work by delivering a spreading oil phase to the foam lamella, and a medium-chain triglyceride can serve as that carrier. In a formula already carrying MCT oil, the lipid phase itself contributes some defoaming behaviour. How much depends on droplet size and on whether hydrophobic particles are present to nucleate film rupture. This is formulation physics with no nutritional consequence.
