Sunflower lecithin isn't one single compound. It's a blend of fat-like molecules called phospholipids, mainly phosphatidylcholine plus two related ones, with a little leftover fat and free fatty acids along for the ride.
Phosphatidylcholine is one of the ways you get choline from food. Enzymes from your pancreas and gut snip the choline off, and it joins the same pool your body draws on to make acetylcholine, betaine and new phospholipids.
Every phospholipid molecule has a water-loving head and two fat-loving tails, so it parks at the boundary between oil and water and keeps the two mixed. That's the basis for using lecithin as an emulsifier in supplements and food.
Phospholipids from your food help build the tiny mixed droplets, called micelles, that dissolve fat-soluble vitamins and carotenoids in your small intestine. Anything oil-loving you take alongside depends on that droplet stage to get absorbed.
Where Sunflower Lecithin comes from.
It comes from sunflower seeds. When sunflower oil is cleaned up, the sticky fatty part that separates out is lecithin, which is then dried into a liquid, a powder or granules. Nothing soy is involved.
