Ascorbate reduces ferric iron to the ferrous form and keeps it soluble in the duodenum, which raises non-heme iron uptake from plant foods. Squash seed paste supplies non-heme iron, so a vitamin C source in the same meal is doing measurable work. The effect is meal-specific and does not carry over to iron eaten hours later.
Cucurbita moschata seeds are a notable plant source of zinc, and the trial in children tested exactly that as a food-based route to better zinc status. Adding a zinc supplement on top means both are drawing on the same intestinal transport capacity. Seed phytate limits how much of the food-borne fraction is actually absorbed.
The seed paste was tested as a food-based way to support iron status in children attending school. Non-heme iron from seeds and supplemental iron use the same DMT1 route, so they compete when taken together in a large dose. Splitting them across the day gets more from both.
Cucurbit seeds store phosphorus as phytate, which binds zinc and iron tightly in the gut. Phytase hydrolyses it into forms that release those minerals. Soaking, sprouting or fermenting the seeds recruits the same activity without an added enzyme.

The orange flesh is one of the richer dietary sources of alpha- and beta-carotene, which the intestinal enzyme BCO1 cleaves toward retinal. A supplement and the food are contributing to the same provitamin A pool. Conversion efficiency varies several-fold between people because of BCO1 genotype.
Preformed retinol from a supplement bypasses the conversion step that carotenoids from squash have to go through. When retinol status is adequate, BCO1 cleavage is downregulated, so the body takes less from the carotenoid side. That feedback is why carotenoid-rich food does not produce retinol excess.
Carotenoids share micellar packaging and the same intestinal transporters, so a large beta-carotene load from squash can lower the absorbed fraction of lutein in that meal. The competition is dose dependent and does not matter at ordinary food intakes. It becomes relevant when a high-dose isolated carotenoid supplement is involved.
Tocopherols and carotenoids compete for space in the same mixed micelles and for the same lipid transport route out of the enterocyte. High doses of one can reduce the absorbed share of the other from the same meal. Food-level amounts rarely reach the point where this matters.
Cucurbit seeds are a dense plant source of magnesium alongside their zinc content. Seed paste therefore contributes to intake in a way the flesh does not. Phytate in the same seeds moderates how much of it is absorbed.
Winter squash flesh is a meaningful potassium source per serving. Anyone with reduced kidney function has been told to watch potassium-dense vegetables, and this is one of them. That is a caution about intake, not a claim about effect.
Squash flesh contributes soluble fibre and pectin, and psyllium adds a viscous gel on top. The two stack into a large total viscous load. Fluid intake needs to keep pace or the gel works against comfort.
