Ascorbate reduces the iron to the ferrous form and competes with those binding sites, raising the share that crosses the intestinal wall. The relevant point is uptake chemistry rather than any measured clinical outcome.
Phytate carried in the seed and fruit binds zinc as readily as it binds iron. Co-ingestion lowers the soluble zinc pool available at the transporter. The interaction is dose dependent and largely avoidable by timing.
Date palm fruit and by-product fibres are mostly pectin, mannan and fructan that survive the small intestine. Those polysaccharides are substrate for lactic acid bacteria and bifidobacteria in the colon. Substrate choice shapes the yield and composition of the resulting mushroom biomass. This is a supply-chain relationship worth knowing and not a co-ingestion effect.
Dehydration concentrates potassium in date palm fruit, so it adds materially to daily intake. Stacked with a potassium supplement or an electrolyte blend, the totals add rather than offset. People counting potassium for kidney reasons should include the fruit in that count.
Both deliver fructan-type fibre to the colon, so the fermentable load compounds. That helps when colonic substrate is the goal and it also compounds gas and bloating when both are started at once. Introduce one at a time.
Date palm fibre is mostly insoluble bulk, psyllium is mostly viscous soluble gel. Together they raise stool mass and water demand more than either alone. Fluid has to go up with them.
