The effect matters where iodine intake is already marginal and becomes negligible where it is adequate. Anyone using garden cress seed regularly should make sure iodine intake is not thin. This is a well characterised class effect rather than a garden cress-specific measurement.
Garden cress seed is one of the higher iron plant foods by weight, but that iron is non-heme and poorly absorbed on its own. Ascorbate reduces it to the ferrous form and keeps it soluble through the intestine. Taking the two at the same meal is the whole mechanism.
