Roe lipids are unusually rich in long chain polyunsaturated fatty acids, which have many double bonds and oxidise readily. Alpha tocopherol sits in the lipid phase and stops the chain reaction that turns those fats rancid. This is why tocopherol is added to almost every marine lipid product. The point here is protecting the material, not a separate benefit in the body.

Salmon and trout roe carry astaxanthin naturally, which is what makes it orange, and the carotenoid sits in the same membrane as the fragile omega-3 chains.
