Ascorbic acid reduces ferric iron to the ferrous form and keeps it soluble in the duodenum, which raises non-heme iron absorption several-fold. Muscle organ meat supplies iron in both heme and non-heme fractions, and only the non-heme portion responds to this. The heme fraction is absorbed by a separate transporter and is largely indifferent to ascorbate. So the benefit is real but applies to part of the iron, not all of it.
Calcium is unusual among dietary inhibitors because it interferes with heme iron uptake as well as non-heme, which is thought to act at a step inside the enterocyte rather than in the lumen. That makes a calcium supplement taken with an iron-rich organ meat a genuine reduction in delivered iron. Separating the two by a couple of hours removes most of the effect. Where gastric function is reduced, that first step limits what is available downstream. The pairing is digestive rather than nutritional.

The connective tissue in gizzard is rich in glycine, proline and hydroxyproline, the same amino acids that hydrolysed collagen supplies. The difference is that collagen peptides arrive pre-hydrolysed into short di- and tri-peptides while gizzard collagen must be broken down first. Both feed the same amino acid pool. Whichever route is used, glycine and proline availability is what is being raised.
Every third residue in the collagen triple helix is glycine, which makes connective-tissue-heavy cuts a substantial dietary glycine source. Supplemental glycine adds to the same pool in free form. Lysyl oxidase, the enzyme that cross-links collagen and elastin fibres, is copper-dependent. Poultry organ tissue carries copper alongside the connective tissue protein, so the food supplies both the substrate and part of the cofactor requirement.
