Most liquid supplements sold as chlorophyll contain sodium copper chlorophyllin, a semi-synthetic derivative: alkaline hydrolysis removes the phytol tail, copper replaces magnesium in the ring, and the free carboxylates are made into sodium or potassium salts, which is what makes it water soluble and colour stable.

Where Liquid Chlorophyll comes from.

It starts as green leaves, usually alfalfa, with the green pigment pulled out using solvent. For most liquid products the pigment is then chemically altered: the fatty tail comes off and copper replaces the magnesium in the centre, which is what lets it dissolve in water and stay green. That copper version is what is in the bottle, and it is not quite the same molecule you eat in spinach.
