Bai zhu is the dried rhizome of Atractylodes macrocephala, and its characteristic constituents are the sesquiterpene lactones known as atractylenolides I, II and III, together with a volatile oil fraction and non-digestible polysaccharides.
Water decoction extracts the polysaccharides preferentially, while alcohol extraction favours the lipophilic atractylenolides and volatile oil, so two extracts of the same rhizome carry different constituent profiles.
The polysaccharide fraction of the rhizome is not broken down by human digestive enzymes and passes to the colon, where gut bacteria ferment it to short-chain fatty acids.
