No study gave these as a pair, so they are not in the card above. But the reason they belong together is settled biochemistry, not a guess, so it is worth knowing.
Ascorbate holds dietary iron in the ferrous state and keeps it soluble through the upper small intestine, which is where non-heme iron is taken up. Bok choy carries both the non-heme iron and a useful amount of vitamin C in the same leaf, so the pairing happens inside one food. This is an absorption effect, not evidence of an effect on iron status by itself.
All the iron in bok choy is non-heme, which enters through the DMT1 route and is far more sensitive to what else is on the plate than heme iron is. Bok choy is low in oxalate compared with spinach or chard, so less of its mineral load is locked into insoluble complexes. Uptake still sits well below that of heme iron from meat.
Oxalate binds calcium in the gut lumen and forms a salt that is not absorbed, which is why the calcium figure on a spinach label overstates what a person gets. Bok choy sits at the low-oxalate end of the leafy greens, so a larger share of its calcium stays soluble. The absolute calcium content per serving is modest, so it contributes to intake rather than covering it.
Glucosinolate breakdown in Brassica vegetables yields thiocyanate, which competes with iodide at the sodium-iodide symporter in thyroid tissue. The competition only becomes meaningful when iodine intake is already low and Brassica intake is high and raw. At ordinary intakes with adequate iodine, it is a chemistry note rather than a practical concern.
Vitamin K1 and the carotenoids in bok choy are fat-soluble and need lipid in the same meal to enter mixed micelles. Fat also drives bile release, which is the step that actually solubilises them. A plain steamed portion eaten with no fat at all delivers less of these than the same portion cooked with oil.
Bok choy supplies phylloquinone, the plant form of vitamin K, which the liver uses preferentially for clotting factor carboxylation. Part of it is converted in tissue to menaquinone-4 through a side-chain exchange step. Menaquinone-7 from a supplement feeds the same vitamin K pool with a longer circulating half-life, so the two are complementary rather than interchangeable.
Bok choy carries glucosinolates such as glucobrassicin and gluconapin, which only become active isothiocyanates once myrosinase cleaves them. Cooking inactivates the plant's own myrosinase, and the gut microbiota then does a slower, more variable version of the same job. A supplemental isothiocyanate delivers the end product directly and does not depend on that conversion step.
When the vegetable is cooked, conversion of glucosinolates to isothiocyanates falls to gut bacteria carrying myrosinase-like activity. People differ widely in how much of that activity they host, which is one reason isothiocyanate output from the same meal varies between individuals. The relationship is mechanistic and has not been shown to change any clinical endpoint.
Leafy Brassica vegetables including bok choy carry inorganic nitrate, which oral bacteria reduce to nitrite and the body then converts onward to nitric oxide. A concentrated nitrate supplement adds to the same pool rather than working through a different route. Anyone tracking a nitrate dose should count the vegetables as part of it.
