Ascorbate holds dietary iron in the ferrous state and keeps it soluble through the upper small intestine, which is where non-heme iron is taken up. Bok choy carries both the non-heme iron and a useful amount of vitamin C in the same leaf, so the pairing happens inside one food. This is an absorption effect, not evidence of an effect on iron status by itself.
