Ascorbate keeps iron in the reduced ferrous state and forms a soluble chelate that survives the shift to intestinal pH, which raises the fraction of non-heme iron absorbed. Passion fruit juice contributes ascorbate along with citric acid, a second organic acid with the same solubilising effect.
