Rebaudioside M is used at milligram levels and gives no bulk, so erythritol supplies the volume, mouthfeel and cooling body that sugar would have provided. Erythritol also shortens the sweetness onset delay that steviol glycosides show on their own.
Mogroside and steviol glycoside blends score sweeter in sensory panels than the two rated separately at the same total level, so formulators use less of each. Their different onset and finish profiles also flatten the lingering tail either shows alone.
Rebaudioside M carries a clean, sugar-like profile but is costly, so it is blended with broader steviol glycoside extracts that supply front-end sweetness at lower cost. The glycosides act on the same receptor, so the blend is dosed as one sweetness total rather than two.
Lowering the pH with citric acid shortens the perceived duration of steviol glycoside sweetness and sharpens the flavour it sits under. Acidified beverage bases are where rebaudioside M performs closest to sugar.
Reb M is sweet at a tiny fraction of the weight of sucrose, which leaves a hole in mouthfeel and powder volume. Chicory inulin fills that volume and adds a mild sweetness of its own. Small amounts of salt reduce perceived bitterness through well-described taste interactions, which is why it appears in sweetened powders. With Reb M it narrows the residual off-note some tasters report from steviol glycosides. The effect is on perception, not on the molecule.
Magnesium citrate and glycinate carry a metallic bitterness that survives most flavouring. Reb M is used in those powders because its sweetness onset covers part of that note without adding sugar load. The pairing is about palatability and delivered dose compliance, nothing more.

Where Reb M (Rebaudioside M) comes from.
It is one of the sweet compounds in the stevia leaf, but only a tiny amount of it is actually in the leaf. So it is either purified out over many steps, made by adding sugar units to a more common stevia compound with an enzyme, or brewed by yeast. The end molecule is the same either way.
The same molecule is reached more than one way. Which route a given product used is a manufacturing choice, and the finished compound is the same either way.
The leaf-extraction route starts with dried stevia leaf. The bioconversion route starts with purified rebaudioside A or D plus a glucose donor. The fermentation route starts with sugar fed to an engineered yeast.
Dried leaf is steeped in hot water, and the crude extract is clarified to remove plant solids and pigment.
In the bioconversion route a glycosyltransferase adds glucose units to rebaudioside A or D to form the M structure. In the fermentation route the yeast builds the glycoside from a simple sugar substrate.
The mixture is passed over adsorbent resin, then crystallised from an ethanol and water system, usually across several passes because the target sits in a mixture of closely related glycosides.
Batches are specified by HPLC on percent rebaudioside M and on the residual profile of other steviol glycosides.
