Wild cherry bark from Prunus serotina contains prunasin, a cyanogenic glycoside. Plant beta-glucosidase and gut bacteria hydrolyse it to mandelonitrile, which breaks down to benzaldehyde and hydrogen cyanide, and the released cyanide is what sets the traditional limits on dose and on prolonged use.
Benzaldehyde released from prunasin gives the bark its characteristic almond-like aroma and is the marker most often used to identify the material.
The bark also carries condensed tannins, which are astringent, precipitate proteins on contact with mucosa and complex divalent metal cations such as iron and zinc in the gut lumen.
Traditional preparation is a cold or low-heat infusion rather than a long boil, because prolonged heat drives off the volatile benzaldehyde fraction and alters the glycoside content of the finished syrup.
Where Wild Cherry Bark comes from.
It is bark from the black cherry tree. The inner bark is peeled, dried gently in the shade so the almond-like aroma survives, then soaked in water or an alcohol and water mix and strained. What comes out is usually thickened into a syrup with honey or sugar. Good makers also check how much of the natural cyanide-releasing compound is present, because the goal there is to keep it low, not high.
Made from a plant. What ends up in the capsule tracks the harvest, so batch testing and a stated marker matter more here than with a made molecule.
Bark is stripped from the trunk or branches of black cherry, most often in autumn when the traditional literature places the glycoside content at its useful level. The inner bark rather than the outer corky layer is the part collected.
