- A widely eaten food, and an energy dense one, so it counts in a day's intake. The old warning about durian with alcohol has a plausible basis in its sulfur compounds.

- Custardy, sweet and heavily aromatic, and the smell divides people sharply. Eaten in quantity it feels warming and heavy, the way a rich dessert does.

- Fermenting it into tempoyak, the traditional lactic method, shifts the sugar, acid and amine profile of the pulp, and it's how the fruit was kept before refrigeration.

Why these belong in the same formula. Each row says what the basis is, from settled biochemistry through to a trial that measured the pair.
Tempoyak is durian pulp fermented by lactic acid bacteria, so the food itself carries live organisms alongside the fruit's fibre. A 2026 review positioned it as a traditional probiotic source and discussed microbiome modulation. That is a review of a fermented food, not a trial of a durian supplement.
The lactic acid bacteria that drive tempoyak fermentation are largely Lactobacillus species, with plantarum prominent among them. They acidify the pulp, change its sugar profile and generate organic acids. This is food microbiology rather than a demonstrated benefit in people.
Durian pulp extract was reported to raise intracellular glutathione in cell work, and N-acetylcysteine raises glutathione by supplying the limiting cysteine. Both point at the same pool from different directions. The durian side of that pairing is cell culture only, so read the combination as mechanistic.
Glycine is one of the three amino acids assembled into glutathione and can become limiting when synthesis demand is high. Anything that pushes glutathione turnover draws on it. This is settled biochemistry and applies regardless of what drives the turnover.
Sulforaphane raises glutamate cysteine ligase expression through Nrf2, increasing the cell's capacity to make glutathione. Polyphenol rich plant extracts, durian among them in cell work, act on overlapping stress response pathways. The overlap is real at the pathway level and untested as a combination in people.
Ascorbate and glutathione regenerate one another in the cell's redox cycle, so adequate ascorbate spares glutathione and the same is true in the other direction. Durian pulp itself carries a meaningful amount of vitamin C. This is the standard antioxidant network relationship, well characterised in biochemistry.
Durian contains a Kunitz-type protein that inhibits trypsin through a distinct binding loop, and trypsin is a core component of pancreatic enzyme blends. Raw durian material taken alongside a protease supplement would work against it. Heat processing denatures most Kunitz inhibitors, so the concern applies mainly to raw or minimally processed material.
Pancreatin is a mixture in which trypsin does much of the protein digestion work. A trypsin inhibitor from raw durian would reduce that activity in the same meal. Separating them or using heat processed durian material sidesteps it.
Durian flowers were profiled by dual platform metabolomics as an alternative agricultural source of procyanidins. Grape seed extract is the established commercial procyanidin source. Combining them adds to the same polyphenol pool rather than doing anything new, so total procyanidin intake is the number that matters.
Condensed tannins bind non-heme iron and form complexes that the intestine absorbs poorly. Procyanidin rich plant material eaten in the same meal as an iron supplement reduces the iron actually taken up. Spacing the two by a couple of hours is the standard workaround.
Durian carries a high potassium load per serving relative to most fruit. Anyone already taking a potassium supplement, or on medication that raises serum potassium, is adding to the same total. That total is what matters, not the fruit in isolation.
The fruit contributes folate as part of its ordinary nutrient profile. In practical terms that means it adds to daily intake rather than interacting with a folate supplement. The contribution is modest against a supplemental dose.
