Zucchini is a squash picked young, before its skin gets tough and its seeds harden. It is almost all water, so it adds bulk to a plate for very few calories, and it will never be a nutrition powerhouse. The useful pigments live in the skin, so do not peel it, and cook it with a little oil, since those pigments need some fat to be absorbed. If a zucchini tastes bitter, spit it out and throw the rest away. That bitterness comes from cucurbitacins, real plant compounds that can make you ill, not a bad batch.
