Blackcurrant fruit is naturally high in ascorbate, and ascorbate reduces the phenoxyl radicals formed when anthocyanins are oxidised. In an extract, ascorbate is also what keeps the anthocyanin pigment from browning during processing and storage. The two travel together in the fruit and are often reunited in a formula.

Dietary nitrate is reduced by oral bacteria to nitrite and then to nitric oxide, an entirely separate route from the polyphenol effects attributed to anthocyanins. Black currant fruit is dominated by four anthocyanins, delphinidin-3-glucoside, delphinidin-3-rutinoside, cyanidin-3-glucoside and cyanidin-3-rutinoside, with the rutinosides usually the larger share.

Blackcurrants are pressed and soaked in slightly acidic water or alcohol to pull out the deep purple pigments, which are then cleaned up, measured, and dried into a powder. The seeds go a different way entirely: they are pressed for their oil, which contains no pigment at all.
