What Enoki Mushroom Extract actually does.

The enoki cell wall is a composite of chitin, a beta-1,4-linked N-acetylglucosamine polymer, cross-linked with beta-1,3 and beta-1,6 glucans. Human digestive enzymes cannot cleave either backbone, which is why the material reaches the colon largely intact and why hot water or alkaline extraction is used to free soluble polysaccharide.

Beta-1,3/1,6-glucans of fungal origin are recognised by dectin-1 and complement receptor 3 on macrophages, neutrophils and dendritic cells. Receptor binding depends on chain length, branching frequency and solubility, so two glucan preparations of identical name can behave differently.

Ergosterol is the principal sterol of the fungal membrane. Ultraviolet exposure opens its B ring to give vitamin D2, so a mushroom's vitamin D content is set by ultraviolet exposure during or after growing rather than by species alone.

Where Enoki Mushroom Extract comes from.

Enoki is grown on sawdust or grain-based substrate in a controlled room, then dried and simmered in hot water, sometimes with an alcohol step as well, to pull the soluble parts of the mushroom out of the tough cell wall. The liquid is concentrated, checked for how much beta-glucan it contains, and dried into a powder.

Produced by a cultured organism rather than harvested. The strain is selected and the conditions are controlled, so batches sit closer together than a field crop.
