The difference is what happens in the lab: the jelly is freeze-dried, then tested for one fatty acid called 10-HDA, and the batch is adjusted so the number on the label is accurate. That test also catches cheating, because anyone who stretches the material with honey or starch dilutes the marker and the assay shows it. Worth knowing: the number describes one fatty acid, not the protein side of the material.
