The saw palmetto lipidosterolic fraction is mostly free fatty acids, and the unsaturated ones oxidise on contact with air and light. Tocopherols are the usual chain-breaking antioxidant added to protect that fill through shelf life. The benefit is to the material in the capsule, which is a stability matter rather than a physiological one.
Carnosic acid and rosmarinic acid from rosemary extract slow peroxidation in oil fills and are widely used where a label prefers a plant-derived antioxidant to synthetic ones. In a saw palmetto softgel they protect the fatty acid profile the extract is standardised on. This is formulation practice, not an added action in the body.
The extract is a lipid, and its uptake follows bile-dependent micelle formation like any dietary fat. Lecithin emulsifies the fill and keeps the sterols dispersed on dilution in the gut. Softgel fills use it for exactly that reason.

The active fraction of Serenoa repens berries is lipidosterolic: roughly 80 to 95 percent free and esterified fatty acids, dominated by lauric, myristic, oleic and linoleic acid, with about 0.2 to 0.5 percent phytosterols including beta-sitosterol, campesterol and stigmasterol.
Because the extract is a lipid mixture, its absorption depends on bile-salt micelle formation and pancreatic lipase activity, which is why intake with a fat-containing meal changes systemic exposure.

Where Saw Palmetto Extract comes from.
Wild palm berries are picked in Florida, dried and ground, then the oily part is pulled out either with pressurised carbon dioxide or with a solvent that is afterwards removed. The oil is chilled and filtered clear, tested to confirm how much fatty acid it holds, and filled into softgels.
Made from a plant. What ends up in the capsule tracks the harvest, so batch testing and a stated marker matter more here than with a made molecule.
Ripe berries are hand-harvested from wild saw palmetto palms, overwhelmingly in Florida and neighbouring US states, over a short autumn window.
Berries are dried to reduce water content, then milled; drying temperature affects the fatty-acid profile and free-fatty-acid content of what follows.
The milled fruit is extracted by one of three routes. CO2 leaves no organic solvent, hexane is the route behind much of the older clinical literature, and ethanol carries a broader set of constituents.
