The galloyl and catechol groups on jaboticaba polyphenols bind ferric iron in the gut lumen and form complexes the intestine does not take up. Non-heme iron uptake drops when the two are taken in the same sitting.
Ferrous sulfate is a non-heme iron salt, exactly the form jaboticaba polyphenols chelate in the gut. Separating the doses by a couple of hours avoids the binding.
Jaboticaba peel carries ellagitannins that hydrolyse in the gut to release ellagic acid. Adding ellagic acid raises the same downstream pool the fruit supplies.

The two act on the same compartment from different sides. Human work is on microbial composition and metabolite output, which are markers rather than outcomes.
Resistant starch is fermented in the distal colon, the same region where ellagitannin to urolithin conversion happens, and it raises butyrate production there. Combining a polyphenol-rich fruit powder with a slowly fermented starch keeps substrate and polyphenol in the same place at the same time. This is a plausible pairing with little direct combination data.
Milk proteins bind anthocyanins and tannins through hydrogen bonding and hydrophobic contacts, which is well described for berry polyphenols mixed into dairy. The bound fraction is less available as free polyphenol in the gut, though the protein also protects some anthocyanin from degradation. Anyone blending a jaboticaba powder into a protein shake is changing that balance rather than simply adding the two together.
Casein binds polyphenols particularly strongly because of its open, proline-rich structure, and the resulting complexes reduce the free polyphenol available in the gut lumen. This is the same chemistry that makes tannic berry juice taste smoother in milk. It is a formulation and timing consideration rather than a reason to avoid either one.
Polyphenols and tannins chelate divalent minerals in the gut, forming complexes that are less available for absorption, and zinc is one of the minerals affected. Separating a concentrated fruit polyphenol dose from a zinc dose by an hour or two removes most of the overlap. This is established polyphenol chemistry rather than a jaboticaba-specific finding.
Tannins bind calcium in the gut lumen the way they bind other divalent cations, which can lower the fraction absorbed from a co-ingested dose. The effect is smaller than for iron and depends on how concentrated the polyphenol fraction is. Timing the two apart is the practical answer.
Tannins cleave the thiamine molecule at its methylene bridge, a reaction long documented for tannin-rich plant materials and the reason tannin-heavy diets are watched for thiamine adequacy. A concentrated jaboticaba peel extract carries the tannin class involved. Taking a B-complex at a different time avoids the chemistry entirely.
Anthocyanins act mostly in the aqueous phase and at membrane surfaces, while tocopherols work inside the lipid bilayer, and each can regenerate the other's oxidised form at the interface. Pairing them covers both phases. What is measured in such studies is oxidation markers, not clinical endpoints.
Bilberry and jaboticaba peel both deliver cyanidin and delphinidin glycosides, so a blend raises the total anthocyanin dose from two sources of the same compound class. That means the doses add rather than complement each other, and total anthocyanin is the number worth reading. Anthocyanin profiles do differ between the two fruits.
Grape seed contributes proanthocyanidins while jaboticaba peel contributes anthocyanins and ellagitannins, three related but distinct polyphenol classes with overlapping redox behaviour. Blends are common in fruit-polyphenol antioxidant complexes. The combination has not been isolated in a human trial.
Pterostilbene and fruit anthocyanins both act on Nrf2-driven antioxidant gene expression, a shared upstream node rather than a shared molecule. Pterostilbene is also more lipophilic, so the two distribute differently. Human combination data does not exist for this pair.

Jaboticaba peel is the anthocyanin-dense part of the fruit, with cyanidin-3-O-glucoside as the dominant pigment alongside delphinidin-3-O-glucoside. An extract standardised on the peel therefore carries a different profile from a whole-fruit or juice powder.
Anthocyanins change structure with pH: the red flavylium cation dominates in acid, and as pH rises toward neutral the molecule shifts to a colourless carbinol pseudobase and then to ring-opened chalcones. Colour loss in a product is a chemical change in the active, not only a cosmetic one.
Anthocyanin glycosides are poorly absorbed intact, and most of the circulating exposure after eating them consists of microbial and phase II metabolites, including protocatechuic acid from cyanidin. Measuring the parent pigment in blood underestimates what the body actually received.
The ellagitannins in jaboticaba are hydrolysed to ellagic acid in the gut and then converted by colonic bacteria to urolithins. That conversion capacity differs sharply between people, which is a known source of variation in response to any ellagitannin-containing fruit.
Where Jaboticaba Myrciaria Cauliflora comes from.
The fruit is picked ripe from a tree that fruits straight off its trunk, then dried fast and cold, because the purple pigments break down with heat, light and time. Some products use the whole fruit and some concentrate just the dark skin, which is where most of the pigment sits. Spray-dried versions are carried on a starch powder, so part of what is in the scoop is carrier rather than fruit.
Made from a plant. What ends up in the capsule tracks the harvest, so batch testing and a stated marker matter more here than with a made molecule.
The fruit grows directly on the trunk and branches of a Myrtaceae tree native to Brazil, and is harvested ripe. Shelf life off the tree is very short, which is why processing sits close to the orchard.
Processing splits here. Either the dark skin is separated from pulp and seed because it holds most of the anthocyanin and tannin, or the whole fruit is pressed for juice, which leaves the skin-bound compounds in the press cake.
For an extract, the peel is contacted with water or a water and ethanol mixture at low temperature and often at acidic pH, since anthocyanins are most stable and most coloured in acid.
The extract is concentrated under vacuum at low temperature, and sugars and acids may be removed on an adsorbent resin to raise the polyphenol share. Heat and neutral pH are both avoided because the pigments do not survive them.
