Shan zhu yu is the dried fruit flesh of Cornus officinalis, with the seed removed. Its characteristic constituents are the iridoid glycosides loganin and morroniside, the secoiridoid cornuside, the triterpene ursolic acid, and hydrolysable tannins including gallic acid and cornusiin compounds.
Loganin and morroniside are iridoid glucosides. Glucosides of this type are poorly absorbed intact and are largely hydrolysed by intestinal and bacterial beta-glucosidases to their aglycones before uptake, which is why gut microbial composition affects the metabolite profile from the same dose.
The hydrolysable tannins in the fruit are what give it its astringent taste and its traditional astringent classification. Chemically, astringency is tannin precipitating salivary proline-rich proteins, and the same protein-binding behaviour is what makes tannins bind dietary minerals and some drug molecules in the gut.
Steaming, the traditional processing step for this fruit, hydrolyses some glycosides and drives Maillard-type reactions, so steamed and unsteamed material differ measurably in loganin and morroniside content. Processing is therefore part of the identity of the material, not a cosmetic step.
Where Shan Zhu Yu Cornel comes from.
These are small red fruits picked in autumn in China. They are steamed just enough to press the stone out, then dried; one traditional version is steamed again with rice wine, which genuinely changes the chemistry. For a capsule, the dried flesh is brewed in hot water or alcohol, concentrated gently, and checked for its marker compounds.
Made from a plant. What ends up in the capsule tracks the harvest, so batch testing and a stated marker matter more here than with a made molecule.
The small red drupes are picked in autumn when fully coloured, mainly from cultivated stands in Henan, Zhejiang and Shaanxi provinces in China.
The fruit is briefly blanched or steamed to soften the flesh so the stone can be pressed out. Only the flesh is the medicinal part; the seed is discarded, and residual seed is a recognised quality defect.
The de-pitted flesh is sun-dried or oven-dried. For the processed grade, it is then steamed with rice wine and re-dried, which hydrolyses part of the glycoside fraction and darkens the material.
