Ascorbate reduces ferric iron to the ferrous form and keeps it soluble, which partly offsets the binding of iron by plant polyphenols. Where a lemon balm preparation is taken near an iron source, vitamin C works in the opposite direction to the polyphenol effect. Both supply catechol-bearing polyphenols that compete for the same phase II conjugation enzymes and the same intestinal efflux routes. Lemon balm leaf is dominated by hydroxycinnamic acids, with rosmarinic acid as the main marker, plus caffeic and chlorogenic acids and a small aromatic fraction of citral, citronellal and geraniol.
The catechol groups on rosmarinic acid hand off hydrogen to free radicals and grab onto metals like iron and copper, which is why the extract acts as an antioxidant in chemical assays.
Little rosmarinic acid is absorbed whole. Gut enzymes cut it into caffeic and related acids, which then get tagged in the gut wall and liver before circulating.
Water and alcohol pull different things from the same leaf. Water favours the polar phenolic acids, while alcohol brings out more of the aromatic and flavonoid fraction.
