Bromelain, papain, trypsin and chymotrypsin are proteolytic enzymes that hydrolyse peptide bonds. Trypsin and chymotrypsin are serine proteases of pancreatic origin, bromelain and papain are plant cysteine proteases, and the four differ in which bonds they cleave and at what pH they hold activity.

Gastric acid and pepsin denature and digest ingested protein, enzymes included, which is why systemic enzyme products carry an enteric coating designed to stay closed at gastric pH and open in the small intestine.
