Glycerol monostearate is a monoacylglycerol: one molecule of glycerol esterified with one stearic acid chain, leaving two free hydroxyl groups. That combination of a fatty tail and a polar head is what makes it surface-active.
Pancreatic lipase and intestinal esterases hydrolyse the ester bond, releasing glycerol and stearic acid. Both then enter normal metabolic routes: glycerol through glycerol kinase into glycolysis or gluconeogenesis, stearate through fatty acid activation and beta-oxidation or re-esterification.
Monoacylglycerols are themselves intermediates of dietary fat digestion and participate in the mixed micelles that carry fat-soluble vitamins and carotenoids to the enterocyte membrane.
