What Black Maca actually does.

Maca is Lepidium meyenii, a member of the Brassicaceae, and like other brassicas it accumulates glucosinolates; the dominant one in maca hypocotyl is glucotropaeolin, the benzyl glucosinolate.

Glucosinolates are biologically inert until hydrolysed: the plant enzyme myrosinase cleaves the thioglucoside bond to release benzyl isothiocyanate and glucose, a reaction that only occurs once plant tissue is damaged or once gut bacteria supply the enzyme activity.

Macamides are the maca-specific constituent class, N-benzylamides formed between benzylamine and long-chain fatty acids; they are the marker compounds used to standardise maca extracts.

Where Black Maca comes from.

It is a root vegetable grown very high in the Peruvian Andes. After harvest the roots dry outdoors for weeks, then people sort out the dark-coloured ones by hand. Those are ground into powder, sometimes cooked under pressure first to make the starch easier on the stomach, and sometimes concentrated into an extract that is tested for its marker compounds.

Made from a plant. What ends up in the capsule tracks the harvest, so batch testing and a stated marker matter more here than with a made molecule.

Grown above roughly 4,000 metres on the Junin and Pasco plateaus of central Peru, where the crop takes seven to nine months to bulk up its hypocotyl. Black is one phenotype within a mixed-colour harvest, not a separate species, which is why yield of black material depends on the seed lot and the field.

Harvested hypocotyls are left to dry in the sun and night frost of the plateau for weeks, the traditional step that shrinks and hardens them. Sorting for the black phenotype happens after drying, by hand, which is where the difference between black, red and yellow lots is actually created.
